Numbers in ( ) were due to the grocery store not having that cut of meat.

Our steers are born and raised on our family farm. There is no use of growth hormones or antibiotics in the production of our beef. Our cattle is also fed the highest quality grains and forages grown on our farm.

The individual cut prices were taken from a local grocery store on November 4, 2008. These prices reflect standard quality meat. Example- Premium Steaks @ $15.49/lb Standard @ $9.99/lb. What this means is that store prices do not reflect what you would pay per cut of Stafford Angus beef.

When you purchase by hanging weight you can expect a 40% loss in weight to get to finished product. The more trimming, boning, and meat ground into burger, the more weight loss you have.. No matter what your finished weight is, you still will have the same amount of meat. For instance if you refuse short ribs, you get the meat in burger instead. This requires extra trimming and boning and results in weight loss.
